Fat…Friend or Foe

First let me say that my success has come from a low carb high fat diet LCHF for short.

I must confess that I am biased. I have always believed that fat is good for you. And I am very happy that the pseudo science of fat causing all kinds of diseases is slowly being exposed. Fat has been the subject of controversy for several decades now. Experts believe the “Fat is bad for you” craze is responsible for the increased consumption of carbs and sugar in the standard western diet and is ultimately responsible for increased incidents of obesity and diabetes.

Dr. Joe Mercola’s article Saturated Fat Helps Avoid Diabetes, is chock full of great information. If you’re not familiar with Dr.Mercola check out his website and youtube videos, he is a leader in the natural health movement.

“my success has come from a low carb high fat diet, but I have always been a supporter of eating fat”

Not all fat is good. There are definitely fats you should avoid: vegetable oil, canola oil, corn oil, trans fats and manufactured fats. As Mee Tracy McCormick says, “if it comes from a plant eat it, if it’s made in a plant don’t.” We can add to that “if it’s raised on a pastured farm that’s good too!” We are only talking about Fat in this post but will add other supergood and superbad foods in subsequent posts. The LCHF photo is from Diet Doctor website

GOOD FATS, what are they?

BUTTER, GRASS FED, SPRING BUTTER. These have the highest amount of good nutrients including hard to get Vitamin K2. I know you may be thinking, doesn’t our body make Vit K? And it does make K1, but not K2. It’s unfortunate K2 is named K2. It would be like naming sugar, protein2. Sugar is nothing like protein and K2 is nothing like K1. Michael Pollan said, “you are what you eat, eats.” And that’s never been truer than with factory farming vs sustainable, pastured and bio-diverse farming.

COCONUT OIL

Here is a really good article from B4BC:
10 REASONS YOU SHOULD BE USING COCONUT OIL

AVOCADOS and AVOCADO OIL Besides being delicious and extremely satiating:

Avocados are a good source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C. Although they are fruits, avocados have a high fat content of between 71 to 88% of their total calories—about 20 times the average for other fruits.

OLIVE OIL, ORGANIC EXTRA VIRGIN (EVOO)
The main type of fat found in all kinds of olive oil is monounsaturated fatty acids (MUFAs). MUFAs are actually considered a healthy dietary fat. If your diet replaces saturated and trans fats with unsaturated fats such as MUFAs and polyunsaturated fats (PUFAs), you may gain certainhealth benefits.

I’m Canadian however half of my heritage is Italian, so I was fortunate enough to grow up eating olive oil. It’s the only oil I’ve ever used. I don’t know how the quality was when I was a kid, but I use Costco’s Kirkland brand now. Let me digress for a moment. I love Costco, they have really stepped up their organic foods of substance and quality. They carry organic milk, eggs, cereals, oils including Coconut oil and even raisins. Remember demand equals supply. You cast your vote every time you buy organic! They don’t yet carry grass fed butter or free penned eggs, but they do have Almond Flour!!!

These are the basic good fats, there are more, like nuts and nut butters and fat from animal protein. We can discuss these in more detail in other posts, but for now, try to add at least one of these to your diet daily.

In my next post I will list the 10 silent warning signs of diabetes, and how mine got ignored for 10 years.

So for now my friends I look forward to hearing from you, (click on comments) leave a comment or send me an email to carla@carlacrothers.com
